England Dessert – Sticky Toffee Pudding
Sticky Toffee Pudding is the perfect winter warmer dessert — a great chunk of cake covered in toffee sauce! Of course for the recipe we had to go to the Queen of Baking, Mary Berry.

The cake itself starts off with the usual flour, sugar, butter and eggs, but then has the addition of black treacle and — crucially — medjool dates. The dates are soaked in boiling water until soft, then blended into a smooth paste that keeps the sponge incredibly moist.


The sponge was baked until just set, then generously doused with the toffee sauce while still warm, allowing it to soak in and create that gloriously sticky finish.
The toffee sauce is a simple combination of butter, cream and dark brown sugar, cooked until thick and glossy. We may have eaten a spoonful or two before it even made it onto the pudding.


Served warm with a generous pour of extra toffee sauce and a scoop of vanilla ice cream, this was the most comforting end to any meal we’ve made so far!
