Italy Dessert – Tiramisu

Sticking with the theme of classic Italian dishes, we had to round off the week with tiramisu! A combination of coffee, rum, chocolate and sponge — this was an easy choice.

We based our tiramisu on this recipe from Recipes From Italy and went for spiced rum rather than Marsala wine — we usually have spiced rum in the cupboard anyway!

Tiramisu ingredients

The mascarpone cream was made by whisking egg yolks with sugar until pale and thick, then folding in the mascarpone until smooth. The egg whites were whipped to soft peaks separately and gently folded in to lighten the mixture.

A strong espresso was made and left to cool before the spiced rum was added. The savoiardi (ladyfinger biscuits) were then briefly dipped in the boozy coffee — just long enough to absorb the flavour without becoming soggy.

The soaked biscuits were layered in the dish, topped with half the cream, then another layer of biscuits and the remaining cream. The top was dusted generously with cocoa powder for the distinctive look and flavour of an authentic tiramisu, then left to set in the fridge.

We can confirm this was absolutely delicious — which was seconded by a friend of ours who is part Italian. So don’t just take our word for it!
