Spain Starter – Patatas Bravas
When we were thinking of dishes to make for Spain, our minds immediately went to tapas — a collection of small and delicious dishes to be shared around a table. Of the most popular tapas dishes, patatas bravas is one of our favourites, so it was the perfect dish to start Spain week.

The potatoes were cut into chunky cubes, parboiled until just tender, then roasted in a good glug of olive oil until golden and crispy. Getting a proper crisp on the outside is the key!

The bravas sauce was a simple tomato-based sauce with smoked paprika, garlic and a pinch of cayenne for heat — tangy, smoky and just the right level of spicy. We also made a quick aioli — garlic, mayonnaise, lemon juice and a pinch of salt.

The crispy potatoes were piled high, drizzled generously with bravas sauce and a swirl of aioli.

These were an absolute crowd pleaser and set the tone perfectly for Spain week. Simple, punchy and utterly delicious!
