Cyprus Main – Spinach and Feta Filo Pie

As the focus was on the Greek side of Cyprus, we looked into making a Spanakopita-style pie for the main course. We found a great recipe on BBC Good Food that we used for this dish!

Again this was a dish that didn’t require a lot of ingredients and was super easy to make. Spinach and feta are a match made in heaven, and the crispy filo pastry adds a wonderful texture contrast.

The filling was a simple combination of spinach (wilted and well squeezed to remove excess water), crumbled feta, eggs and seasoning. Getting the spinach as dry as possible is key here — too much moisture and the filo will go soggy.

The filo sheets were layered in a buttered dish, with each sheet brushed with olive oil. The filling was then added, topped with more oiled filo sheets and the edges tucked in neatly before baking.

The pie came out golden and beautifully crispy on top. Cutting into it revealed a vibrant green filling — proper Mediterranean comfort food!

This is one of those dishes that tastes like it took far more effort than it actually did. Definitely one we’ll be making again!
