Canada Dessert – Beaver Tails
To round off Canada week, we donned our Canadian tuxedos (aka a lot of denim) and made beaver tails! Essentially these are deep-fried flat doughnuts covered in cinnamon sugar. If that doesn’t sell you on beaver tails we don’t know what will!

The dough was a simple yeasted recipe — flour, sugar, yeast, butter, egg and milk combined and left to prove until doubled in size. Once proved, the dough was divided into portions and stretched into the characteristic flat oval shape that gives beaver tails their name.
We then used a knife to create imprints to create a beaver tail pattern.

These were then deep fried until golden and puffed, before being immediately coated in a generous amount of cinnamon sugar while still hot.

Crispy on the outside, pillowy on the inside, and absolutely covered in cinnamon sugar — these were a massive hit and a perfect end to Canada week!
