Canada Main – Poutine
For the main course for Canada, of course we had to go for poutine! Again for this we had help from our Canadian counterparts (@thehealthyhighlander).

Poutine is traditionally served with cheese curds and a meat-based gravy, however we wanted to make this vegetarian so opted for a vegetarian gravy. Also as we are based in South Wales, it is very difficult to get cheese curds here so we improvised with mozzarella to match the texture.
The first step was to make the chips from the potatoes. We opted for fries rather than fat chips, so they could absorb more of the cheese and gravy. The fries were cooked off in the oven, before the mozzarella was added and everything went back in to let the cheese melt.

To make the gravy, the mushrooms and shallots were chopped and sautéed.
Once the gravy was made, it was served on top of the chips and cheese for the final poutine dish!

Despite the substitutions this tasted every bit as good as the real thing! Let us know if you give this a go.
