Northern Ireland Dessert – Fifteens

For dessert from Northern Ireland, at the request of the Head Chef (Ben), we had to make Fifteens! These are a no-bake staple dessert that are very quick and simple to make.

We used a recipe from Elsa Eats. Fifteens are a mixture of only 5 ingredients, with a very easy ratio to remember: 15 marshmallows, 15 biscuits (digestives), 15 glacé cherries, plus condensed milk and desiccated coconut.

The biscuits are crushed, the marshmallows and cherries roughly chopped, then everything is bound together with condensed milk. The mixture is then shaped into a log and rolled in desiccated coconut before being wrapped in cling film and chilled in the fridge until firm.

Once set, the log is sliced into rounds and served. The result is a wonderfully sweet, chewy, no-fuss traybake-style treat that is impossible to stop eating.

These are a beloved Northern Irish classic and were a huge hit with everyone who tried them. A perfect make-ahead dessert that requires zero baking!
