Northern Ireland Main – Mushroom and Guinness Pie

Of course we had to include a recipe with Guinness! For this recipe we used a recipe from the BOSH! book, which we highly recommend getting your hands on. This also means if you’re able to get vegan pastry (or even make your own), this is a vegan-friendly meal too.

Pie ingredients

This mushroom and Guinness pie is a brilliant vegetarian take on a classic Irish stew pie. The Guinness gives the filling an incredible depth of flavour — rich, malty and deeply savoury.

The filling was built by frying off a mixture of mushrooms with onion and garlic, then adding the Guinness along with vegetable stock, tomato purée and thyme. This was left to simmer down until thick and glossy.

The filling was transferred to a pie dish, topped with a sheet of shop-bought shortcrust pastry, edges crimped and glazed with a little plant-based milk.

After 30 minutes in the oven, the pastry was golden and beautifully crisp. We served it with creamy mashed potato and buttered peas.
