Northern Ireland Starter – Ulster Fry

For Northern Ireland, we timed our cooking to coincide with St Patrick’s Day! And what better way to start than with an Ulster Fry — the Northern Irish take on a full cooked breakfast?

A classic Ulster Fry consists of sausages, bacon, eggs, black and white pudding, potato bread and soda bread. Naturally some of these ingredients aren’t vegetarian, so we chose to focus on the bread elements to tie the meal together, using veggie sausages and Linda McCartney bacon.

The first step was to make the potato bread (aka tatty bap). This is a simple mixture of mashed potato, flour, butter and salt, rolled flat and cooked in a dry pan. The soda bread was a quick flour, buttermilk and bicarbonate of soda loaf baked in the oven.

Everything was then fried together — sausages, bacon, eggs, black pudding, white pudding, and the breads — until golden.

This was an absolute feast! As the Head Chef (Ben) grew up in Northern Ireland, this one was particularly close to his heart. Let us know if you give the Ulster Fry a go — Sláinte!
